Bulgaria Presents its Green Cheese to Europe

15 September 2011 | Two unique Bulgarian cheeses will be presented this week at the Slow Food Cheese Forum in Bra, Piemonte.

The Green cheese (on the picture above) is produced in the village of Cherni Vit, near the town of Teteven in Northern Bulgaria. It ages in caves, where it is covered by a culture of the mold Penicillium, peculiarly coloured in green.



The other cheese is made from the milk of Karakachanski sheep – special hairy breed (on the picture below), raised in the village of Vlahi, on the southern slopes of Pirin mountain.

The Cheese Forum of Slow Food in Bra will present cheese and milk in all its shapes between 16th and 19th September. The highlight of this year's event will be France, where farmers preserved their technologies for producing cheese from raw milk.
